Required Ingredient:

  • Butter, softened 175g
  • Light soft brown sugar 175g
  • Eggs, beaten 3
  • Self-raising flour 175g
  • Baking powder ½tsp
  • Ground mixed spice 2tsp
  • Mixed dried fruit 115g
  • Brandy or orange juice 2tbsp
  • Icing sugar 115g
  • Hot water 1-2tbsp
  • Glace cherries 12
  • Holly leaves, to decorate


First of all set the heat of oven at 180°C/350°F/Gas Mark 4.Take a nonstick 12=hole muffin tray and through grease. Then put a circle of baking paper in the base of ever hole. Take a large bowl and add in butter, sugar, eggs, flour, baking powder and mix well with the help of an electric hand held mixed for 3 to 4 minutes until creamy. Then add in dried fruits and orange juice. After this process a full spoon of this mixture into the prepared tray and put into the oven for 25 to 30 minutes. After this leave in the tray for 3 to 4 minutes then turn out a wire rack and leave it for cool.

On the other hand add icing sugar into the bowl and stir with warm water to make a thick and smooth icing. Put the spoon of this mixture on the top of the cake and decorate with holly leaves.
